Most double-bevel knives are marketed as ambidextrous, but many are subtly optimized for right-handed use. The NAGOMI Professional is different — each knife is carefully finished for left-handed users, so the blade moves naturally through ingredients with better control and less resistance.

The gyuto is the Japanese take on a Western chef's knife — longer, thinner, and exceptionally well-suited to slicing. With a blade length of 240mm (9.4 in.), it offers the reach and versatility needed for breaking down larger cuts of meat, fish, and vegetables.

 

Cutting Performance Built on a Trade Secret

The blade is made from a proprietary stainless steel developed exclusively by Mitsuboshi Cutlery. Designed to deliver a cutting feel close to carbon steel while remaining easy to maintain, the exact composition is — true to the craft — a closely guarded secret.
