The honesuki is a single-bevel knife, which means handedness matters more than usual. This one is finished specifically for left-handed users, giving the blade the natural angle and control needed for precise poultry work.

The honesuki is a traditional Japanese knife designed for one job: breaking down chicken and trimming meat around bones. Its triangular blade shape provides strength and precision when working around joints, cartilage, and small bones — tasks where a standard chef's knife quickly reaches its limits.

 

Developed with a Professional Chef

This knife was developed in collaboration with Chef Yoshida of Cirpas, Tokyo — a chef who trained at Dominique Bouchet in Paris and later worked as the meat section chef at Pierre Gagnaire Tokyo. His professional input shaped a knife that performs at a level serious home cooks and professionals alike will appreciate.

 

Cutting Performance Built on a Trade Secret

The blade is made from a proprietary stainless steel developed exclusively by Mitsuboshi Cutlery. Designed to deliver a cutting feel close to carbon steel while remaining easy to maintain, the exact composition is — true to the craft — a closely guarded secret.
