White Thumb — the mark of a pastry professional

White Thumb is a brand from Endo Takashi Shoten, a Japanese manufacturer of professional kitchenware and confectionery tools based in Tsubame City — a city renowned across Japan for its metalwork and kitchen tool production. The name is a nod to the pastry world: where Green Thumb signals a gifted gardener, White Thumb evokes the flour-dusted hands of a skilled pastry chef.

These scissors were designed for professional kitchen use. The blade configuration is reversed for left-handed cutting, and every other decision — all-stainless construction, seamless handles, dishwasher-safe finish — follows the same principle: a tool built to be used hard and cleaned thoroughly, every day.

All stainless, no gaps

The entire scissors is made from stainless steel, handles included. There are no seams where residue can collect — wipe down, run through the dishwasher, done. Note: the scissors cannot be disassembled for cleaning.

A compact form that earns its keep

At 170 mm overall with a 70 mm blade, these are smaller than a traditional kitchen scissors — closer in form to a quality stationery scissors. Light at 87 g, they're easy on the hand during extended use. The rounded, smoothly finished handles sit comfortably in the palm. Well-suited to detailed work: decorating, plating, confectionery, or any task that calls for precision over brute force.
