This knife was developed in collaboration with Chef Yoshida of Cirpas, Tokyo — a chef who trained at Dominique Bouchet in Paris and later worked as the meat section chef at Pierre Gagnaire Tokyo. The blade is made from a proprietary stainless steel developed exclusively by Mitsuboshi Cutlery. Designed to deliver a cutting feel close to carbon steel while remaining easy to maintain, the exact composition is — true to the craft — a closely guarded secret.
