The Riverline Santoku — an entry point, not a compromise
The santoku handles the full range of everyday kitchen work: vegetables, meat, fish. The Riverline is designed as a first knife for left-handed cooks — approachable in size, light in the hand, and easy to maintain. At 165 mm, the blade is slightly shorter than a standard santoku, giving it the maneuverability that makes it well-suited to smaller hands and smaller kitchens alike.
Made by Mitsuboshi Cutlery, Seki — since 1873
This knife is made by Mitsuboshi Cutlery, a blade manufacturer based in Seki City, Gifu — one of the world's three great centers of cutlery production. Founded in 1873, Mitsuboshi has over 150 years of blade-making history in the same city where this knife is forged.
Named for the Nagara River
The Riverline's five-line handle and flowing silhouette take their inspiration from the Nagara River, which runs through Seki City. It's a quiet nod to the place where this knife was made.
Finished specifically for left-handed cooks
Most double-bevel knives are marketed as ambidextrous — but in practice, the finishing is subtly optimized for right-handed use. The Riverline is finished specifically for left-handed users, so the blade moves through ingredients naturally from the first use.
All-stainless, easy to care for
The seamless all-stainless construction — blade through handle — means no joints where residue collects. The hollow handle keeps the weight down to 125 g, making it one of the lightest santoku knives in its class. Dishwasher safe.
A note on the steel: the Riverline uses a softer stainless steel than higher-priced knives, which means the edge dulls a little sooner. The upside is that it sharpens easily — a few passes with a sharpener or whetstone brings it back quickly. Regular light maintenance keeps it performing well.
